Winter is on its way and with will come cold and wet weather which will make yo feel crappy. To make you feel better when you get in from the cold you could do worse than a steaming bowl of homemade simple tomato soup.
This is the quickest, easiest and tastiest tomato soup with garlic toast you will ever come across without actually opening a tin of tomato soup.
2 Tins Plum tomatos or over ripe tomatos or combo of both.
1 Handfull fresh Basil leaves.
1 Bulb of Garlic.
Bunch of Parsley.
4 tbsp Yogurt.
Salt and pepper.
Heat the olive oil in a large saucepan and gently cook the garlic and onion until soft.
Add in the tomatos and bring to a simmer and cook for 10 minutes.
Add the yogurt and blend with a stick blender untill you get the texture you desire and season.
I like to serve with cheese on toast, yes I can hear the gasps of WTF but don’t knock it till you have tried it, Its delicious , a good loaf sliced at 15-20 mm toasted on both sides then rubbed with a raw garlic bulg then cheese added and grilled,,,,,,,,,, but that’s for another post.
